CHEESE is a Slow Food international exhibition of the world’s finest artisan cheeses. Slow Food Australia wants to encourage Australian cheesemakers to participate in the next edition in the Italian town of Bra in 2011.
By staging Cheese, Slow Food demonstrates the importance of maintaining age-old milk skills and artisan cheese culture in a mass-market world. Cheese helps to build small-scale production and valuable know-how by promoting producers who combine high product quality with respect for the environment and the animals and people involved in cheesemaking. It also informs consumers to make discerning choices.
Cheese includes taste workshops, the Great Cheese Market, degustation dinners of cheese and wine, special showcase workshops featuring rare cheeses from isolated farming communities, Slow Food praesidia cheeses once at risk of loss, and the Great Hall of Cheese and Enoteca exhibiting protected-designation-of-origin [PDO] cheeses from the Italian, French and Swiss high country.
The next edition of Cheese will be held in Sep 2011.
